This recipe is delicious and leaves you with tasty leftovers for lunch the next day. It’s easy to make and perfect for bringing the family together at the dinner table.

My Recipes

Ingredients

  • 5 to 6 medium potatoes, cubed and boiled in seasoned water, then drained
  • 4 to 5 chicken breasts, cut and seasoned to your preference
  • 1 tablespoon of canola, olive, or vegetable oil for sautéing
  • 2 medium sweet peppers (mixed colors), chopped
  • 1 medium yellow onion, chopped
  • Salt, black pepper, Creole seasoning, and garlic powder to taste
  • 2 tablespoons of teriyaki sauce, Prego or Ragu sauce, ketchup, and pancake syrup, combined with ½ cup of hot water (whisk until smooth)

Instructions

Boil the potatoes until fully cooked, then drain and set aside.

  1. Saute the onions, peppers, and chicken with seasoning to taste. Add the sauce to coat the chicken, mix well, cover, and cook on low heat for 10 minutes.

  2. Stir in the potatoes and let everything simmer for an additional 5 minutes, until most of the liquid has evaporated.
