Zucchini or Potato Latkes

 “Zucchini Pancakes” are made from shredded zucchini and batter. While some may think that sounds weird in a batter, it is actually quite tasteful.  These pancakes are perfect for any meal – breakfast, lunch, or dinner – my kids love them.

My Recipes

Ingredients

  • 2 medium-sized zucchini (shredded using a medium-sized grater)
  • 3 large potatoes (shredded using a medium-sized grater)
  • 1/2 medium-sized onion (shredded using a small-sized grater)
  • 1 large egg
  • Flour and/or breadcrumbs (for coating)
  • 4 small peppers (variety of colors, shredded using a small-sized grater)

Instructions

  1. Grate the onion using a small grater, and the potatoes and zucchini using a medium grater. Season to taste and set aside.
  2.  
  3. In a bowl, add the egg and flour, then mix until well combined.
  4.  
  5. Heat oil in a frying pan. Spoon the mixture into the pan and fry each side until golden brown. Once cooked, remove the latkes from the pan, stack them on a plate, and enjoy!

Tips

When shredding potatoes and zucchini, drain the excess liquid from it before adding the egg.
