Zucchini/Potato Latkes

 “Zucchini Pancakes” are made from shredded zucchini and batter. While some may think that sounds weird in a pancake, it is actually quite tasteful.  These pancakes are perfect for any meal – breakfast, lunch, or dinner – and are sure to leave your taste buds very happy.

Ingredients

  • 2 medium sized zucchini shredded ( medium size grater )
  • 3 large potatoes shredded ( grate on medium size grater )
  • 1/2 medium size onion shredded ( small size grater )
  • 1 large egg
  • 4 small variety colors of peppers I like different colors in the mix shredded ( small size grater)

Preparation

  1. Grate an onion on small grater, potatoes/zucchini on medium grater, seasoning to taste, set aside. 
  2. Add an egg, flour, mix 
  3. Drizzle Oil in frying pan, spoon out the mixture unto the pan, fry each side until brown, take it out, stack latkes in a plate, and enjoy it. 

Tips

When shredding potatoes and zucchini, drain the excess liquid from it before adding the egg.
